HOMEMADE SUSHI

Hey everyone, 
Sushi is probably my favourite food but it can be economically impractical and inconvenient to have to buy it out all of the time so sometimes I like to make my own. This is a recipe which will talk you through the ingredients required and steps necessary to take in order to achieve delicious and healthy homemade sushi.
Ingredients:
Sushi Rice
Seaweed Sheets
 Fillings
Mayonnaise
Ginger
Soy Sauce
Wasabi
Step 1: Put your sushi rice in the microwave to cook  for about 10-15 minutes.
Step 2: While your waiting for your rice to cook, set up your rolling mat with a sheet of seaweed on it.
Step 3: Also while your waiting, cut up all of your fillings. I like cucumber, capsicum and avocado.
Step 4: Once your rice has finished, come back to your rolling mat with seaweed on it.
Step 5: Place a thin layer of rice on your seaweed sheet.
Step 6: Place small amounts of your fillings in the center of the sheet.
Step 7: Make sure to include mayonnaise because this helps stick everything together. 
Step 8: With your rolling mat, roll up the sushi and ensure that the edges are sealed.
Step 9: Slice up the sushi into even sections.
Step 10: Now it's time to set up the table with sushi sides, plates and cutlery.
Have a little bowl for ginger and another one for soy sauce. I also like to include a little serving plate.

ICED FRUIT TEA

Hey everyone, 
Here is my recipe on something I love to drink, especially on hot summer days and it's iced fruit tea.
 Ingredients
Flavoured Tea
Nectarine
Apple
Sugar
Ice
The first thing is to pick your flavour of tea; I personally really like fruity teas so go for berry ones. For this recipe I used "Cranberry and Pomegranate" but "Raspberry, Strawberry and Loganberry" also works really well.
Make your tea in a large tumbler but don't fill it completely with water, allowing for fruit to increase the capacity. Let it sit for about half an hour to cool down.
Cut up your fruit into wedges. I like to use nectarines and apples because they taste good and are red so match the tea but really you can use any fruits you like.
 Pop the fruit into the tumbler along with some ice.
Add a straw and it's ready to drink!

MEXICAN BURRITOS

Hey girls,
I love Mexican food but it's not always so convenient to go out to a Mexican restaurant to eat so I have come up with a couple of recipes that I personally use when I have to make it myself. I always order a burrito and have come up with a recipe which tastes almost as good so keep reading if your interested.
 Ingredients:
Tortillas
Refried Beans
Nachos Topping
Chile Sauce
Mexican Chile Powder
Cheese
Rice
Avocado
Lemon Juice
Sour Cream
Shallots
Step 1: Mixture
a. Mix the rice with the refried beans in a bowl.
b. Add the nachos topping, Chile sauce and Mexican chile powder into the rice and refried beans mixture.
Step 2: Assembling
a.) Take your tortilla and place it on a plate.
b.) Place the mixture in a line, in the middle of the tortilla.
c.) Add your cheese on top and then place it in the microwave for about 40 seconds to melt it.
d.) Roll your burrito up.
Step 3: Guacamole
a.) Cut your avocado in half, take out the seed and then scoop all of the flesh out of the skin and mash it all up with a fork. 
b.) Add some lemon juice for added taste.
c.) Cut up some shallots and add them into the mix.

♥ VALENTINES DAY CUPCAKES ♥

Hey girls,
Valentines Day is less than a week away so here is another Valentines treat idea that is not only super delicious but also festive and cute! These would make as perfect gifts for your special someone or as a dessert on Valentines day or really any time because they taste so good!
I found these adorable decorations that add to the cute valentines theme.
I decorated using red sprinkles because it is the colour of love!
These really pretty, high gloss cupcake wrappers match the red sprinkles perfectly!
I just used my basic chocolate cupcake recipe that you can check out here to create the actual cupcake. I used Betty Crocker icing and a piping bag for the topping and also some red hearts to make them a little more themed for Valentines.
 
 I think they turned out really cute and romantic themed, perfect for Valentines.

CHOCOLATE BROWNIES

Hey girls, 
This is my recipe for delicious chocolate brownies. A perfect treat that you can give as a gift for Valentines Day by packaging it nicely!
 Ingredients:
200g unsalted butter, chopped
200g dark chocolate, broken into pieces
1 cup brown sugar
3 eggs, lightly beaten
1 teaspoon vanilla extract
3/4 cup gluten-free plain flour
2 tablespoons cocoa powder

Method:
1. Preheat oven to 190°C. Line a 5cm deep, 18cm (base) square cake pan with non-stick baking paper.  
2. Heat butter, chocolate and sugar in a saucepan over low heat, stirring constantly, until melted and smooth. Transfer to a heatproof bowl. Set aside to cool slightly.
3. Add eggs and vanilla to chocolate mixture. Mix well. Sift flour and cocoa over chocolate mixture. Stir to combine.
4. Pour brownie mixture into pan. Bake for 20 minutes or until just set. Set aside to cool. Once cooled, lift out. Wrap in plastic wrap. Place into an airtight container. Stand for 1 day. Cut into pieces. Serve.
