VEGGIE NUGGIES (VEGETABLE NUGGETS) RECIPE





















Last night I posted a picture of my dinner (veggie nuggies) to instagram and had so many of you ask for the recipe and how to make them so that's exactly what I'm doing! One of my favourite things to do is play around in the kitchen trying out/inventing healthy recipes and I absolutely love the way this one turned out so will definitely be making it in the future! This is a great source of vitamins, minerals and nutrients (from the vegetables) and protein (from the egg and LSA meal) but the best part is that it tastes like you're eating a deep fried nugget or something even though it's pretty much just baked vegetables. Keep reading to find out how to make these super delicious Veggie Nuggies.

Ingredients
1 Onion
2 Large Potatoes
1 Zucchini
1 Carrot
1 Egg
LSA Meal
Garlic Cloves
Ginger Root
Salt & Pepper
Herbs & Spices

Method
Step #1- Preheat oven to 200°C and line a baking tray with parchment paper.
Step #2- Peel and cut your potatoes then boil them for 10-15 minutes in pepper.
Step #3- Finely chop your onion and cook it on a frying pan with the minced garlic, grated ginger, salt, pepper, herbs and spices. Also while the potato is cooking, grate your zucchini and carrot.
Step #4- After 10-15 minutes of your potatoes cooking; drain, mash then leave to cool. Whisk your egg up in a bowl and lay out your LSA meal onto a plate.
Step #5- After combining the onion blend, potato, carrot and zucchini in a bowl, take handfuls of the mixture and shape them into rectangular prisms. Then dip them in the egg mixture and roll them in the LSA meal.
Step #6- Place the veggie nuggies onto your paper lined baking tray and bake for 15-20 minutes or until brown and crispy.
Once you take them out of the oven, leave to cool for about 5-10 minutes and serve with salad or quinoa.
