LOW-FAT TIRAMISU AND HOT CHOCOLATE RECIPE
























My guilty pleasure that I can't resist is tiramisu and it always tastes way much better homemade because you can modify the ingredients to your taste so I thought I would share my recipe for the delicious coffee dessert as well as my favourite way to make hot chocolate. Keep in mind these recipes serve 6 so it's perfect if you're having company over but definitely adjust the ingredients if it's just for yourself.

Tiramisu
Makes- 6

Ingredients:
1 cup Coffee
1/3 cup Kahlua liqueur
10 Sponge Finger Biscuits
1 1/2 cups light Vanilla Custard 
400g extra light Philadelphia
3/4 cup Icing Sugar
1 tsp Vanilla Essence
3 tsp Cocoa Powder 

Method:
Step #1- Combine the coffee and Kahlua in a large jug. Beat the cream cheese, custard, icing sugar and vanilla together in a large bowl until smooth and creamy.
Step #2- Divide half the biscuits among 6 cups. Drizzle over half the coffee mixture. Top with half the custard mixture. Dust with half the cocoa powder. Repeat with the remaining biscuit, coffee mixture, custard mixture and cocoa powder.
Step #3- Cover with plastic wrap. Place in the fridge for 2 hours to chill.


Hot Chocolate
Makes-

Ingredients:
1/2 cup (110g) Caster Sugar
125g Dark Chocolate, roughly chopped
300ml Light Cream
3/4 cup Cocoa Powder
1L (4 cups) Light Milk
Light Whipped Cream (to serve)

Method:
Step #1- Place the sugar and 1/2 cup of water in a pan over medium-low heat to just below boiling point. Stir until the sugar dissolves, then simmer for 2 minutes until slightly thickened. Add the chocolate and stir until melted, then whisk in cream, cocoa and 1/3 cup milk. Transfer to a jug.
Step #2- Warm the remaining milk in a pan over medium-low heat to just below boiling point. Divide among mugs and add warm chocolate mixture to taste with whipped cream and extra cocoa.
