COOKIE COVERED OREOS [COOKIE IN A COOKIE]

Hey everyone, 
So this is a recipe for those with a sweet tooth and who aren't afraid of gaining weight! It is the ultimate deliciously fatty food, a cookie inside a cookie and not just any cookie but an Oreo! A pretty straightforward recipe but nevertheless keep reading if your interested!
Your only going to need two ingredients, these being:
Cookie Mix 
Your going to want a cookie mix, with chocolate chunks is pretty delicous and adds a whole new level of chocolateness. My all time favourite box mix that I recommend is Betty Crocker.
Oreos
This time I used Chocolate Cream but Double Stuffing is the best flavour for this purpose! Strawberry Cream and of course Original Cream work well also!
Just follow the directions on the packet of your mixture to make the cookie dough.
Unpackage your Oreos and begin covering them in cookie dough.
Once you have covered your oreos, place them onto a baking tray lined with baking paper.
Now put them in the oven for a little under the recommended cooking time so that they stay a little bit gooey inside which is always a bit nicer to eat.
Once the cookies have finished cooking, cut them open to look at the awesome design and enjoy.
I love the concept behind these, it's like cookieception.

VEGETABLE STIR FRY

Hey everyone, 
A perfect dinner when your wanting something light and healthy is a vegetable stir fry.It is super easy and simple to make but I thought I would do my recipe for it anyway in case anyone is interested in how I make mine.
Ingredients:
Asparagus
Zucchini
Capsicum
Tofu
Cauliflower
Step 1: Cut up all of your ingredients.
Step 2: Place all of the vegetables in a wok with some oil and stir constantly.
Step 3: Simply serve in a bowl and optionally on a bed of rice.
 I really hope you try this out next time your looking for a light and healthy meal.

CHOCOLATE AND VANILLA WHOOPIE PIES

Hey everyone, 
I decided to make whoopie pies for the first time a couple of days ago and thought I would share my experience with you. They are almost like the new macaroon, two halves joined together with a cream. So if you know how much I love macaroons then you will have some idea of how eager I was to try out these and I think it's safe to say that these are amazingly delicious and I could argue they come close to the quality of macaroons.

The generally accepted legend of whoopie pies is that they evolved from little individual cakes mothers would make their children from leftover chocolate cake batter and frosting—the "whoopie" is said to be the kids' happy shout.
 Ingredients: 
2 cups all-purpose flour 
1/2 cup Dutch-process cocoa powder 
1 1/4 teaspoon baking soda 
1 teaspoon salt 
1 cup well-shaken buttermilk 
1 teaspoon vanilla 
1 stick (1/2 cup) unsalted butter, softened 
1 cup packed brown sugar 
1 large egg
1 stick (1/2 cup) unsalted butter, softened 
1 1/4 cups confectioners sugar 
1 cup marshmallow cream such as Marshmallow Fluff 
1 teaspoon vanilla
Cakes:
Step 1: Whisk together flour, cocoa, baking soda, and salt in a bowl until combined. Stir together buttermilk and vanilla in a small bowl.
Step 2: Beat together butter and brown sugar in a large bowl with an electric mixer at medium-high speed until pale and fluffy, about 3 minutes in a standing mixer or 5 minutes with a handheld, then add egg, beating until combined well. Reduce speed to low and alternately mix in flour mixture and buttermilk in batches, beginning and ending with flour, scraping down side of bowl occasionally, and mixing until smooth.
Step 3: Spoon 1/4-cup mounds of batter about 2 inches apart onto 2 buttered large baking sheets. Bake in upper and lower thirds of oven, switching position of sheets halfway through baking, until tops are puffed and cakes spring back when touched, 11 to 13 minutes. Transfer with a metal spatula to a rack to cool completely.

 Filling:
Step 4: Beat together butter, confectioners sugar, marshmallow, and vanilla in a bowl with electric mixer at medium speed until smooth, about 3 minutes.
Step 5: Assemble the Whoopie Pies. Spread a rounded tablespoon filling on flat sides of half of cakes and top with remaining cakes.
It was a great first experience trying out whoopie pies and considering how delicious they are, I will definitely be making them again in the future!

BRUSCHETTA

Hey everyone,
I find Italian food delicious so this recipe is for Bruschetta which is an Italian antipasto. Bruschetta is basically crispy garlic/olive oil slices of baguette that are topped with a tomato/parsley/salad onion mixture. Keep reading to find out how to create this delicious entree perfect for entertaining.
Ingredients:
1x Baguette
Spray Olive Oil
Minced Garlic
Grated Cheese
2x Tomatoes
1x Salad Onion
1x Parsley Bunch
Lemon Juice
Lime Juice
French Dressing
Step 1: Slice up your baguette into thin slices.
Step 2: Spray the slices with the olive oil and rub in some miced garlic and top with cheese.
Step 3: Bake your baguette slices in the oven for 10-15 minutes to crisp.
Step 4: Thinly dice your tomato, parsley and salad onion and place it into a bowl.
Step 5: Combine the lemon juice, french dressing and lime juice into the mixture. 
Step 6: Check on your baguette crisps and if they are brown and crispy, take them out.
Step 7: Place your bowl of mixture on a large plate and arrange the baguettes around the bowl.
Bruschetta is always a popular party food and great to serve when entertaining!

HEDGEHOG SLICE

Hey everyone, 
One of my favourite sweet slices and absolute weakness is hedgehog slice so I thought I would share my recipe.
 Ingredients:
125g Shortbread Biscuits
200g Milk or dark chocolate
30g Copha
Step 1: Crush up your biscuits by placing them in a plastic zip lock bag and crushing them with a wooden spoon.

Step 2: Place the chocolate and copha into a saucepan, stir constantly until both ingredients have mixed together and melted completely.
Step 3: Combine the mixture with the biscuits, stirring so that all of the biscuits are distributed evenly.
Step 4: Place mixture into a creased 25cm pan, patting the mixture flat and place into the fridge to cool.
Step 5: After finished cooling, slice into rectangles and ice with chocolate frosting.

HOMEMADE SUSHI

Hey everyone, 
Sushi is probably my favourite food but it can be economically impractical and inconvenient to have to buy it out all of the time so sometimes I like to make my own. This is a recipe which will talk you through the ingredients required and steps necessary to take in order to achieve delicious and healthy homemade sushi.
Ingredients:
Sushi Rice
Seaweed Sheets
 Fillings
Mayonnaise
Ginger
Soy Sauce
Wasabi
Step 1: Put your sushi rice in the microwave to cook  for about 10-15 minutes.
Step 2: While your waiting for your rice to cook, set up your rolling mat with a sheet of seaweed on it.
Step 3: Also while your waiting, cut up all of your fillings. I like cucumber, capsicum and avocado.
Step 4: Once your rice has finished, come back to your rolling mat with seaweed on it.
Step 5: Place a thin layer of rice on your seaweed sheet.
Step 6: Place small amounts of your fillings in the center of the sheet.
Step 7: Make sure to include mayonnaise because this helps stick everything together. 
Step 8: With your rolling mat, roll up the sushi and ensure that the edges are sealed.
Step 9: Slice up the sushi into even sections.
Step 10: Now it's time to set up the table with sushi sides, plates and cutlery.
Have a little bowl for ginger and another one for soy sauce. I also like to include a little serving plate.
